Directions:
In a large stock pot combine the lime juice, coconut milk, wine, curry paste, garlic, and fish sauce.
Add in curry paste and stir to dissolve.
Bring to a boil over high heat for 2 minutes, and then add Honey Mussels™ (scrubbed with beard removed).
Cover and cook stirring occasionally until Honey Mussels are open, 5 to 8 minutes.
Remove from the heat and pour mussels* with liquid into a serving dish.
Toss dish with cilantro.
*discard any unopened mussels.
