Honey Mussels wins big in the Canadian Culinary Championships this year!

Chef Roger Ma was awarded gold with his west coast inspired dish featuring the Honey Mussel™. His winning dish was honey mussel “gratinee” foraged bull kelp, unicustard, yukon potato and scallion terrine and manila clam emulsion. Head judge James Chatto described the dish as “Vancouver on a plate”.

Chef Roger Ma is an executive chef at Boulevard Kitchen and Oyster Bar. He said that “there was a lot of Vancouver in it, ingredients from the coast with an Asian inspired philosophy.”

Sailor’s Seafoods is honoured an to be an ingredient to Chef Ma success.
